Winemaking:
Fermentation at controlled temperature with selected yeasts, both in steel containers and in truncated conical wooden vats.
Refinement:
18 months in French oak barriques – 50% first passage and 50% second
use.
Tasting Notes:
Three native grapes: Sangiovese, Montepulciano and Sagrantino from three fundamental regions in the Italian wine scene. The bet was to co-ferment them on the same frequency, that of the parallel 43, a tuning that has the ambition to find the maximum balance and create a "perfect individual", a sort of fermentative metamorphosis of three apparently distant but , in the final result, very similar.
