Winemaking:
Soft pressing of the grapes and separation of the free-run must. Alcoholic fermentation at a controlled temperature of 15° C
Refinement:
6 months in concrete tanks, on fine lees with periodic bâtonnage and 3 months in bottle
Tasting Notes:
A delicate vinification gives the Didi a pale bright pink color.
The aromatic picture of this rosé is characterized by fruity notes of small red berries, wild strawberry and pomegranate, which blend with more floral notes of rose and violet on the nose. Harmonious, rich, and pleasantly persistent and sapid on the palate.
