Clays mixed with very fine sands, with limestone, called Sant’Agata marl.

Winemaking:

The grapes are harvested directly in small crates, stacked on pallets exposed in the best ventilated areas: it is here that the grapes wither thanks to the autumn breezes and remain until the end of the harvest. It is then destemmed by hand and softly pressed. Fermentation in contact with the skins lasts 18/20 days, at a temperature of 15-18 ° C., with daily coots.

Refinement:

Malolactic fermentation takes place in barriques during the aging period, a minimum of 30 months long. After the wine rests in bottle for at least 6 months.

Tasting Notes:

Ruby red rich in nuances tending to garnet. The aromatic persistence is engaging. From the surprising delicacy of the bouquet you can recognize oriental spices such as cumin, cardamom and pepper. Warm on the palate, of exceptional balance and softness and of long aromatic persistance.
